Preheat the oven to 350 F.
Line a large baking sheet with parchment paper.
In a medium bowl, whisk together flour, granola, baking powder and salt.
In a large bowl, beat together eggs and sugar. Add vanilla, almond extract and melted butter. Give everything a nice whisk.
Stir in flour and granola mixture.
Transfer the dough onto a prepared baking sheet and with wet hands pat the dough into a 11 by 4 inches log.
Bake for 25 minutes. Then remove from the oven, let it cool for about 5 minutes and cut the log crosswise into ½-inch-thick slices.
Transfer biscotti back onto the baking dish one side up and bake for 10 minutes. Turn biscotti to the other side and bake for another 10 minutes. Remove from the oven and let cool on a wire rack.
Meanwhile, place white chocolate in a small bowl or cup and put it in the microwave. Heat it in 30 seconds intervals stirring in between sessions until chocolate has melted. Dip each biscotti in melted chocolate and carefully place it on a wire rack allowing chocolate to harden.
