Cinnamon Raisin Granola with Coconut Oil

This vegan Cinnamon Raisin Granola with Coconut Oil is made with just 5 ingredients. Delicious and super crunchy, this granola is the perfect breakfast when you haven't gone grocery shopping in a while!

Ingredients

  • 3 cups oats I recommend old-fashioned rolled oats
  • 1 teaspoon ground cinnamon
  • 2 tablespoon coconut oil melted
  • ½ cups maple syrup
  • cups raisins

Instructions

  • Preheat the oven to 300 F and line a large baking sheet with a parchment paper.
  • In a large bowl, mix oats, coconut oil, cinnamon, maple syrup and raisins.
  • Spread the granola mixture out onto a baking sheet and bake for 35 minutes, stirring halfway through.
  • Remove granola from the oven, let it cool and store in the airtight jar.

Notes

Maple syrup. If you like to make your cinnamon raisin granola sweeter, you can add ¼ cup more maple syrup.
Stirring. If the edges start to brown quickly, take the raisin granola out of the oven and stir, then return and continue baking until it's done.
Baking. Don't over-bake! The coconut oil granola will continue to crisp as it cools, so it's okay if it seems soft when it's fresh out of the oven.
Temperature. Every oven is different so keep an eye on it. The best way to tell if your cinnamon  granola is ready is to look at the color. If the oats are golden, then it's done.
 
Storing. If stored in an airtight jar, this cinnamon raisin granola will keep fresh for several weeks. Keep it in a dark cabinet to help it retain its freshness.
 
Freezing. You can freeze it in an airtight container for up to 3 months. If you have a vacuum sealer, use it to help remove all the air in a plastic bag prior to freezing.
