Hearty Vegan Shepherd's Pie

Vegan Shepherd's Pie is a plant-based version of the classic dish, made with a savory filling of tofu, and vegetables, and topped with creamy mashed potatoes. Great for a cozy family dinner.

1. In a medium bowl combine Tamari, smoked paprika, garlic powder, onion powder and chili powder. Crumble the tofu and coat into a paste. Spread on a parchment lined baking sheet and bake at 350 F for 30-35 minutes stirring halfway through.

3. Cook onion until softens and browns. Add garlic and cook for 1 more minute. Stir in tomato paste, flour and cook for 2-3 minutes. Add tofu, red wine and scrape up any browned bits off the bottom of the pan. Add Italian seasoning, broth, frozen vegetables, salt and Cayenne pepper. Simmer the sauce for 5 minutes.
