Oladi are sweet and fluffy Russian pancakes that are a staple on weekend breakfast menu. This recipe is easy to make and loved by kids and adults.
– ▢1 c Kefir (see my recipe post for substitution tips) – ▢¼ c water – ▢1 egg – ▢2 c all purpose flour you might need to add 2-3 more tablespoons of flour – ▢2 tablespoon sugar – ▢½ teaspoon salt – ▢½ teaspoon baking soda – ▢3 apples peeled, cored, and diced – ▢5-6 tablespoon neutral oil for cooking like coconut oil or avocado oil
1. Make a batter. In a small bowl combine Kefir and water and microwave for 30 seconds. In another large mixing bowl combine together egg, salt and sugar.
2. Add warmed kefir and mix everything until combined. Gradually add in 2 cups of flour mixing the batter until it's smooth and without lumps. The batter should resemble a dense sour cream. If it's too thin, add a few more tablespoons of flour, one at a time. Add in baking soda and mix everything once again.
3. Meanwhile, peel, core and dice apples. Add them to a batter.
4. Mix the batter until all apples are coated.
4. Fry the pancakes. Melt the oil in a large non-stick skillet over medium heat. Drop a heaping tablespoon of batter in a skillet and fry for 2-3 minutes until golden-brown on the bottom. Flip and fry for another minute. Transfer fried pancakes on a plate, add more oil if needed and continue frying the remaining batter.
5. Serve the Russian pancakes immediately with a sprinkling of powdered sugar and jam.
