    Step 4: Lightly flour your work surface. Take about one-quarter of the dough and roll it into a log about 1 inch in diameter.

    Step 5: Dust the log with a little more flour. Cut it into 1-inch pieces using a butter knife, slicing at a slight angle.

    Ingredients

    • 16 oz farmers cottage cheese (2 cups)
    • 2 eggs
    • ¼ cup cane sugar
    • 1 lemon zested
    • ¼ teaspoon salt
    • ¾ cup all-purpose flour plus more for dusting

    Instructions

    • Press the farmer’s cottage cheese through a fine-mesh sieve into a large bowl.
    • Add the eggs, sugar, lemon zest, and salt. Mix until smooth and well combined.
    • Stir in the flour until a soft dough forms. The dough will be slightly sticky but should hold together and be easy to shape.
    • Lightly flour a work surface with about 2 tablespoons of flour. Divide the dough into portions and take one portion at a time. Roll it into a log about 1 inch in diameter.
    • Lightly dust the log with flour, then use a knife to cut it at a slight angle into 1-inch pieces. Sprinkle the pieces with a little more flour to prevent sticking.
    • Repeat with the remaining dough. If the dough becomes too sticky, add a little more flour, 1 to 2 tablespoons at a time, until manageable.
    • Bring a large pot of water to a boil, then reduce the heat to a gentle boil. Carefully add the dumplings in batches, making sure not to overcrowd the pot.
    • Once the dumplings float to the surface, cook for an additional 2 minutes. Remove with a slotted spoon and transfer to a bowl.
    • Add a small amount of butter to the cooked dumplings and gently toss to coat. Continue cooking the remaining batches.
    • Once all dumplings are cooked, add a little more butter and gently toss to coat evenly.
    • Serve immediately with sour cream or your favorite jam.

    Notes

    • Different brands of farmer’s cottage cheese vary in moisture. Start by adding about ½ cup of flour, then add more as needed, a few tablespoons at a time, until the dough can be rolled into a log.
    • Avoid adding too much flour, as the dumplings should remain light and fluffy.
    • Cut the dumplings evenly so they cook at the same rate and stay soft inside.
    • Don’t overcrowd the pot when boiling. Give the dumplings space to float and cook evenly.
    • Once they rise to the surface, cook for just 2 minutes to keep them tender. Overcooking can make them dense.
    • Toss the hot dumplings with butter right after cooking to prevent sticking and add flavor.
    • Serve them warm with sour cream, fruit jam, or a drizzle of honey for a sweet finish.
