Shepherd Salad With Sweet Pepper, Red Onions And Oregano

This past month was really intense for me. Recently I gave birth to our second daughter and needless to say that first few months with a newborn baby are tough. Add an active toddler wanting a constant entertainment and my days are guaranteed to leave a little to no room for myself.
Anyways, food is something that moms have to cook regardless of the level of tiredness. And in my case, I have to make it quick and delicious. So what can be quicker that Shepherd salad with my favourite Feta cheese? I have to say, I make Shepherd Salad quite often. I love that you can roughly chop up the veggies, throw it all together and have a yummy salad made in no time.
- 2 tomatoes, sliced
- 1 cucumber, chopped
- ½ yellow bell pepper, chopped
- 1 red onion, thinly sliced
- 1 scallion, chopped
- 12 Kalamata olives, pitted
- 7 oz Feta cheese, chopped into large chunks
- 1 teaspoon dry oregano
- ¼ teaspoon salt
- olive oil
- In a big mixing bowl, combine tomatoes, cucumber, bell pepper, onion, scallion and Kalamata olives. Sprinkle with dry oregano, add salt and olive oil and mix gently.
