Peanut Butter, Caramelised Pears and Mint RITZ Cracker Appetizer
Happy Monday my dear friends! Spring is in the air and every day is getting warmer and warmer.
It's my absolute favorite season, because it's not too hot just yet and not too cold. Plus we're just a week away from the beginning of spring holiday season. Do you know what that means? That's right, you need recipes. In fact, you need new recipes that are spring worthy, fun and easy to put together.
I don't know about you, but me and my husband love having guests over. Our schedules are pretty busy these days and two young kids don't give us a chance to let loose. Despite that, we still love to invite our friends over to get some fun times into our chaotic-filled days.
Do you like to host as much as we do? If you answered no, but still love a good laughter with friends, here's the good news. Hosting a party doesn't have to be stressful. Me, like no one else knows it. With 2 little kids, I rarely have time for making complicated dishes. If you've been reading my blog for awhile, you know that is true.
So, here's the formula for a good conversation starter. Throw a couple of quick appetizers, that are easy to make and taste awesome! Hint - My Peanut Butter, Caramelised Pears and Mint RITZ Cracker Appetizer is one of those easy appetizers. I'll show how quickly you can whip it up.
First, you'll need a base for the appetizer. Head over to the nearest Walmart and purchase RITZ Original Crackers. They make a perfect snack for any occasion. Next, you need a good peanut butter. For a spreadably smooth sandwich, Peter Pan® Creamy Peanut Butter is the best.
Now for the topping. While you're in the store, visit fresh produce department and pick several firm pears and a bunch of fresh mint. If you don't have butter and sugar in your pantry, grab those along the way.
Now comes a fun and easy part - assembling. Using a spoon or a pastry bag with a flower tip, pipe peanut butter on to a cracker.
Set aside and caramelise pears. It's actually easy-peasy. In a small sauce pan or non-stick skillet, melt butter and add pears. Give them a few minutes to soften, then sprinkle with a sugar and see the magic happen. Sugar glaze will coat the pears making them soft with a distinctive and appealing aroma.
Now, all you have to do is place pear slices on a cracker and garnish with fresh mint. I recommend you don't skip the mint part. It adds nice fresh flavor to the appetizer and cuts through the sweetness of pears and peanut butter.

Instructions
- Place 15 RITZ Original Cracker on a serving plate.
- Using a spoon or a pastry bag with a flower tip, pipe peanut butter on to a cracker.
- In a small non-stick skillet over medium heat, melt butter and add pears.
- Give them a few minutes to soften, then sprinkle with sugar, toss and allow sugar to evenly coat pears about 1 minute.
- Off the heat and cool slightly.
- Place 1 piece of caramelised pear on to a cracker and garnish with a mint leaf.
- Enjoy!
