This One Pot Hamburger Helper is my favorite way to make a classic family meal at home. The pasta cooks right in the sauce, soaking up all that savory flavor. Leftovers reheat beautifully too.

Why This Recipe Stands Out
This one pot hamburger helper is my favorite kind of comfort food. It’s cozy, cheesy, and completely satisfying without the boxed stuff.
- Everything Cooks in One Pot: No extra dishes, no boiling water separately, and no mess. Just toss it all together and stir.
- Perfectly Creamy and Cheesy: The combo of cheddar, broth, and milk makes the sauce rich enough to coat every bite of pasta.
- Loaded with Flavor: Garlic, smoked paprika, and sun-dried tomatoes give it way more depth than the classic version. It reminds me of my Beef Stroganoff.
- Kid-Friendly and Weeknight-Approved: My whole family loves this one. It’s fast, filling, and makes plenty for leftovers, a lot like my 5-Ingredient Sloppy Joes.
Key Ingredients

- Ground Beef – Hearty and savory, ground beef forms the flavorful base of the dish and gives it that classic comfort-food feel.
- Short Pasta – Whether you use elbows, shells, or penne, short pasta soaks up all the rich, cheesy sauce for a satisfying bite in every forkful.
- Cheddar Cheese – Sharp and melty, cheddar gives the dish its creamy texture and bold, cheesy flavor that ties everything together.
- Milk & Beef Broth – This combo creates a creamy, flavorful cooking liquid that tenderizes the pasta and deepens the richness of the sauce.
- Onion, Bell Pepper & Garlic – Sautéed until soft and fragrant, these aromatics lay a savory foundation and add depth to every layer of flavor.
- Sun-Dried Tomatoes – Intensely sweet and tangy, they add a pop of concentrated flavor that boosts the tomato base.
- Tomato Paste & Spices – Tomato paste adds depth and body, while smoked paprika and oregano deliver warmth and a hint of spice.
- Parsley – Sprinkled at the end, parsley adds a fresh finish and a touch of color that balances the richness of the dish.

Substitutions and Variations
Here are some of my favorite substitutions and variations:
- Ground Beef Alternatives: Ground turkey, chicken, or plant-based crumbles can be used for a lighter or meatless version without sacrificing flavor.
- Cheese Choices: Sharp cheddar adds richness, but a mix of mozzarella, Monterey Jack, or even pepper jack brings a different flavor and texture. Use dairy-free cheese to make it vegan.
- Veggie Add-ins: Bell pepper and sun-dried tomatoes add sweetness and depth, but you can also stir in spinach, peas, mushrooms, or shredded zucchini to bulk up the nutrition.

What to Serve with Beef Pasta Hamburger Helper
Fresh Salads
- Pair this dish with a crisp green salad tossed in a light vinaigrette to cut through the creaminess of the cheese and beef.
- You can also serve it with a tangy coleslaw or a simple carrot salad for a refreshing contrast.
Vegetable Sides
- Add a plate of roasted fall vegetables on the side for extra veggies without a lot of prep. Their slight bitterness and crisp edges help balance the richness of the pasta.
- Steamed peas or sautéed zucchini are also great additions that stay mild in flavor but offer a nice textural contrast.
Bread and Extras
- A slice of warm garlic bread or toasted sourdough goes perfectly with this dish. It’s great for scooping up cheesy bits or wiping the bowl clean.
- If you want something lighter, offer a small bowl of pickles or marinated vegetables on the side to brighten up the plate.

Frequently Asked Questions
Yes, elbow macaroni, small shells, penne, or rotini all work well in this recipe. Choose a short pasta that cooks in about 10–12 minutes for best results.
This recipe is flexible. You can add baby spinach, peas, shredded zucchini, or frozen mixed veggies during the last few minutes of cooking. Sautéed mushrooms are also a great addition.
Stir the pasta occasionally while it simmers in the broth and milk. Make sure the liquid stays at a gentle simmer and that the pot isn’t too crowded.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a saucepan over low heat or in the microwave with a splash of milk or broth to keep it creamy.

Recipe

One Pot Hamburger Helper
Ingredients
- 2 tablespoons olive oil
- 1 medium onion finely minced
- 1 red bell pepper seeded and finely chopped
- 5 sun-dried tomatoes in oil, drained and finely chopped
- 3 cloves garlic finely minced
- 1 pound ground beef
- 3 tablespoons tomato paste
- 1 ½ teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt plus more to taste
- ½ teaspoon black pepper
- 1 ½ cups whole milk or 2% for lighter
- 3 cups low-sodium beef broth or chicken broth
- 12 oz short pasta elbow, shells, or penne
- 2 cups sharp cheddar cheese grated
- 2 tablespoons parsley chopped
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, bell pepper, and sun-dried tomatoes and saute, stirring occasionally, until the vegetables soften, about 5 minutes.
- Increase the heat to medium-high. Add garlic and ground beef and saute until all liquid evaporates and the meat is browned, breaking it into small crumbles, 5-7 minutes.
- Stir in tomato paste, smoked paprika, oregano, ½ teaspoon salt and pepper and cook for 1 minute.
- Add milk, broth, pasta and remaining ½ teaspoon salt. Give it a stir, reduce the heat to medium and cook for 10-12 minutes until the pasta is al dente or to your liking. Stir the pasta occasionally to prevent it from sticking.
- Once the pasta is cooked, stir in cheddar cheese until melted.
- Spoon into the bowls, sprinkle with parsley, and serve immediately.
Notes
- Use a heavy-bottomed pot or Dutch oven to prevent sticking and ensure even cooking as the pasta simmers.
- Finely mince the onion, bell pepper, and sun-dried tomatoes so they melt into the sauce and boost the flavor without chunky texture.
- Brown the beef thoroughly and let any liquid fully evaporate. This concentrates the flavor and keeps the dish from getting watery.
- Tomato paste adds richness and depth. Let it cook for a minute to remove any raw taste before adding the liquids.
- Use short pasta shapes like elbows, shells, or penne. They cook quickly and absorb the sauce well, creating that signature creamy texture.
- Stir the pasta occasionally as it cooks to prevent it from sticking to the bottom and to keep the sauce evenly distributed.
- Grate the cheddar cheese fresh if possible. It melts more smoothly and gives the dish that classic creamy finish.
- Taste before serving and adjust the seasoning if needed. The cheese and broth add saltiness, so a final taste test helps balance everything.
- Sprinkle with fresh parsley just before serving. It adds color and a pop of freshness to the rich, cheesy pasta.
