    Here are some of my favorite substitutions and variations:

    • Ground Beef Alternatives: Ground turkey, chicken, or plant-based crumbles can be used for a lighter or meatless version without sacrificing flavor.
    • Cheese Choices: Sharp cheddar adds richness, but a mix of mozzarella, Monterey Jack, or even pepper jack brings a different flavor and texture. Use dairy-free cheese to make it vegan.
    • Veggie Add-ins: Bell pepper and sun-dried tomatoes add sweetness and depth, but you can also stir in spinach, peas, mushrooms, or shredded zucchini to bulk up the nutrition.

    How to Make One Pot Hamburger Helper

    Step 1: Heat olive oil in a large pot over medium heat. Add onion, bell pepper, and sun-dried tomatoes. Sauté for 5 minutes until softened.

    Step 2: Increase heat to medium-high. Add garlic and ground beef. Cook for 5–7 minutes, breaking up meat, until browned and liquid evaporates.

    Step 3: Stir in tomato paste, smoked paprika, oregano, ½ teaspoon salt, and pepper. Cook for 1 minute.

    Step 4: Add milk, broth, pasta, and remaining ½ teaspoon salt. Stir, reduce heat to medium, and cook for 10–12 minutes until pasta is al dente, stirring occasionally.

    Ingredients

    • 2 tablespoons olive oil
    • 1 medium onion finely minced
    • 1 red bell pepper seeded and finely chopped
    • 5 sun-dried tomatoes in oil, drained and finely chopped
    • 3 cloves garlic finely minced
    • 1 pound ground beef
    • 3 tablespoons tomato paste
    • 1 ½ teaspoon smoked paprika
    • 1 teaspoon dried oregano
    • 1 teaspoon salt plus more to taste
    • ½ teaspoon black pepper
    • 1 ½ cups whole milk or 2% for lighter
    • 3 cups low-sodium beef broth or chicken broth
    • 12 oz short pasta elbow, shells, or penne
    • 2 cups sharp cheddar cheese grated
    • 2 tablespoons parsley chopped

    Instructions

    • Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, bell pepper, and sun-dried tomatoes and saute, stirring occasionally, until the vegetables soften, about 5 minutes.
    • Increase the heat to medium-high. Add garlic and ground beef and saute until all liquid evaporates and the meat is browned, breaking it into small crumbles, 5-7 minutes.
    • Stir in tomato paste, smoked paprika, oregano, ½ teaspoon salt and pepper and cook for 1 minute.
    • Add milk, broth, pasta and remaining ½ teaspoon salt. Give it a stir, reduce the heat to medium and cook for 10-12 minutes until the pasta is al dente or to your liking. Stir the pasta occasionally to prevent it from sticking.
    • Once the pasta is cooked, stir in cheddar cheese until melted.
    • Spoon into the bowls, sprinkle with parsley, and serve immediately.

    Notes

    • Use a heavy-bottomed pot or Dutch oven to prevent sticking and ensure even cooking as the pasta simmers.
    • Finely mince the onion, bell pepper, and sun-dried tomatoes so they melt into the sauce and boost the flavor without chunky texture.
    • Brown the beef thoroughly and let any liquid fully evaporate. This concentrates the flavor and keeps the dish from getting watery.
    • Tomato paste adds richness and depth. Let it cook for a minute to remove any raw taste before adding the liquids.
    • Use short pasta shapes like elbows, shells, or penne. They cook quickly and absorb the sauce well, creating that signature creamy texture.
    • Stir the pasta occasionally as it cooks to prevent it from sticking to the bottom and to keep the sauce evenly distributed.
