Ingredients
- 2 tablespoons avocado oil
- 1 onion medium. minced
- 8 oz mushrooms minced
- 2 zucchini medium, diced
- 1 red bell pepper diced
- 4 cloves garlic finely minced
- 1 cup frozen corn
- 3 tablespoons tomato paste
- ½ lb rotini or fusilli
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes
- 2 cup vegetable broth
- 1 cup mozzarella cheese shredded
- salt and pepper to taste
Instructions
- Heat oil in a large saute pan over medium heat. Add onion and cook, stirring occasionally, for 5 minutes.
- Add mushrooms, zucchini, and bell pepper, increase the heat to high, and cook, stirring frequently, for 10-15 minutes until the water from the mushrooms evaporates and the veggies start to brown. Add garlic and stir for 30 seconds.
- Stir in corn and tomato paste.
