    Key Ingredients

Ingredient overview for the microgreens salad.
    • Microgreens – Microgreens are the star of this recipe. They are not only packed with nutrients, but they also add a fresh, delicate crunch to the salad.
    • Radishes – Thinly sliced radishes not only add a pop of color to the salad but also contribute a peppery crunch that contrasts beautifully with the mild microgreens.

    Substitutions and Variations

This microgreens salad is a fresh and flavorful dish that's perfect for any occasion. Here are some of our favorite substitutions and variations to make this salad your own:

    • Greens: We love using a mix of microgreens for this salad, but feel free to use any kind you like. Try using just one type of microgreen, or switch it up with some baby spinach, arugula, or whatever you have on hand.
    • Veggies: The green onion, radishes, and English cucumber are all crisp, refreshing additions to this salad, but you can even use thinly sliced bell peppers, cherry tomatoes, or even some grated carrots.
    • Fruit: We love the creamy avocado in this salad, but feel free to get creative with your fruit additions. Some fresh berries, diced apples, or even some citrus segments could take this salad to the next level.

    How to Make Microgreens Salad

Step 1: Combine microgreens, green onion, radishes, cucumber, and avocado in a large bowl.

Step 2: Drizzle with olive oil, red wine vinegar, and season with salt and pepper. Mix well and serve immediately.

What to Serve with Microgreens Salad

    Main Dishes

    • Pair this microgreens salad with a side of garlic focaccia or a warm baguette for a light, refreshing meal.
    • It also makes a great starter to a heartier main course. Try serving it before a classic Spaghetti Carbonara or a comforting Mustard Chicken.

    Sandwiches

    • A simple, classic sandwich is the perfect partner for this fresh salad. We recommend trying it with a Chickpea Salad Sandwich or High Protein Sardine Sandwich.

    Soup

    • If you're serving this salad as a main course, consider adding a cup of soup on the side. An Austrian Garlic Soup or a White Bean Mushroom Soup will work great.

    Frequently Asked Questions

What type of microgreens are best for this salad?

You can use any kind of microgreens for this salad. Some popular options include kale, broccoli, radish, and arugula microgreens. Feel free to mix and match to find your favorite combination.

Why do I need to use red wine vinegar?

Red wine vinegar adds a nice tangy flavor to the salad. It helps to balance the richness of the avocado and the mildness of the microgreens. If you don't have red wine vinegar, you can substitute it with lemon juice for a similar effect.

How do I know if the microgreens are fresh?

Fresh microgreens should have vibrant colors and crisp, tender leaves. Avoid any microgreens that look wilt, yellow, or have signs of mold. It's best to buy microgreens from a trusted source to ensure their freshness.

How long does microgreens salad keep?

Microgreens salad is best enjoyed fresh on the day it is made. If you have to store it, we recommend adding the dressing just before serving, and it can be kept in the refrigerator for up to 24 hours.

    Notes

    • For the best results, make sure to wash your microgreens thoroughly before using them in your salad. This will help to remove any dirt or impurities and keep your salad fresh and safe to eat.
    • Feel free to get creative with your choice of microgreens. Pea shoots, sunflower shoots, or even a spicy mix can add a unique and delicious twist to your salad.
    • When slicing your green onion and radishes, aim for thin, uniform pieces. This will help the flavors to distribute evenly throughout the salad and make for a more pleasant texture.
    • English cucumbers are a great choice for this salad because they are seedless and have a mild, sweet flavor. Be sure to chop them into bite-size pieces for easy eating.
    • Similarly, when preparing your avocado, try to keep the pieces bite-size. This will make the salad easier to eat and ensure that you get a little bit of avocado in every bite.
    • Olive oil and red wine vinegar are a classic dressing choice for salads, and they work beautifully with microgreens. Drizzle them over your salad just before serving for the best flavor.
    • This salad is best enjoyed immediately after dressing. If you're making it ahead of time, keep the dressing on the side and add it just before serving to keep the microgreens crisp and fresh.
