Lavender Chocolate Panna Cotta With Blueberry Jello
Hello my friends! How is the summer treating you so far?
Today I want to share with you a very special dessert. Why special? You might ask. Because just look at it. I won't be so modest to say that it'sย absolutely beautiful.
Panna Cotta has always been one of my favourite easy desserts. Last time I made it though was awhile ago.
At first I was thinking to go with a traditional one layer Panna Cotta that I made last winter and which was absolutely mouthwatering.
But after I went spending some time on Pinterest and exploring some fancy variations of this dessert, I knew I had to take my Panna Cotta up a notch.
What's interesting about this famous Italian dessert is that even though it looks complicated with all the layers, but in fact, it couldn't be any easier to recreate the same fancy dessert at home.
For my Panna Cotta, I used martini glasses, but any glasses will do. I just think desserts in tallย glasses look a tad more fancier, but that's just me:)
My Lavender Chocolate Panna Cotta has 3 different layers. First layer made with real lavender which you can buy online or go pick your own lavender during its season which is in July. Lavender panna cotta layer has a beautiful flavour and a very mild taste.
Second layer is a chocolate layer. Tangy, sweet and comforting.
And since recently I went blueberry picking, I wanted to incorporate them into my dessert in some way. So a third layer of my Lavender Chocolate Panna Cotta is aย blueberry jello layer made with fresh blueberries.
You probably noticed a little golden nest in each glass, aren't you?:) This is a totally optional step, but I wanted to give my Panna Cotta a new sophisticated spin. It is called a spun sugar and it's a pretty easy technique. I watched this video for how-to instructions.
A few words on angled layers. They'reย actually really easy to recreate. You work with one layer at a time. Pour yourย first layer of Panna Cotta into each glass at an angle until almost to the edge of each glass and very carefully placeย the glass in a fridge maintaining the same angle. Prop your glasses with anything that will keep them stable. Let the first layer chill for a couple hours. And then repeat the process with another layer, but pour the Panna Cotta mixtureย in the opposite direction.
If you're working with regular stemless glasses, you canย place them in a mini muffin pan orย egg carton at an angle. That way you won't have to prop the glasses in a fridge.

Ingredients
Lavender layer
- 2 cups heavy cream
- 1 envelope gelatin powder
- 100 grams ยฝ cup sugar
- 3 tablespoons cold water
- 1 tablespoons lavender flowers
- 1 teaspoon vanilla
Chocolate layer
- 2 cups heavy cream
- 1 envelope gelatin powder
- 100 grams ยฝ cup sugar
- 3 tablespoons cold water
- 2 tablespoon unsweetened cocoa powder
Blueberry jello layer
- 1 cup fresh blueberries
- 1 cup water
- 1 tablespoon gelatin powder
- 2 tablespoons honey
Instructions
To make a lavender layer.
- Dissolve gelatin in 3 tablespoons of cold water. Let sit for about 5 minutes.
- In a small sauce pan, heat heavy cream, sugar, vanilla extract and lavender flowers just until simmers. Take off the heat and strain the mixture through a sieve.
- Add gelatin and stir until gelatin is completely dissolved.
- Let the mixture cool slightly.
- Divide equally into 5 glasses pouring the mixture at an angle until almost to the edge of each glass and very carefully place the glass in a fridge maintaining the angle. Prop your glasses with anything that will keep them stable. Chill for 2 hours in a refrigerator or until set.
To make chocolate layer.
- Dissolve gelatin in 3 tablespoons of cold water. Let sit for about 5 minutes.
- In a small sauce pan, heat heavy cream, sugar and cocoa powder just until simmers. Take off the heat, add gelatin and stir until gelatin is completely dissolved.
- Let the mixture cool slightly.
- Divide equally into 5 glasses and pour the mixture into each glass at the opposite angle from lavender layer until almost to the edge of each glass.
- Very carefully place the glass in a fridge maintaining the angle. Prop your glasses with anything that will keep them stable. Chill for 2 hours in a refrigerator or until set.
To make a blueberry jello layer.
- In a small sauce pan and over medium low heat, combine water and blueberries and simmer until blueberries are soft.
- Strain the mixture through a wire mesh.
- Add gelatin and stir until completely dissolved.
- Add honey and let the mixture cool slightly.
- Divide equally into 5 glasses and pour the mixture into each glass at the opposite from chocolate layer angle until almost to the edge of each glass. Carefully place the glass in a fridge maintaining the angle. Prop your glasses with anything that will keep them stable. Chill for 1 hour in a refrigerator or until set.
Notes
This Lavender Chocolate Panna Cotta is a very silky, smooth and airyย dessert, that tastes absolutely scrumptious. Try it and it will quickly become your favourite dessert.

It's a spun sugar. It's easy to make, there are a few videos on Youtube like this one on how you can achieve this.

Made these desserts today. They are delicious. Only problem we had was putting the gelatin directly in the blueberries. It clumped up in the juice. We strained it and softened the gelatin in water before adding to the gelatin. That worked much better. This is so glamorous.

What did you use to prop the martini glasses in your fridge?

Hi Anita! I rolled 2 kitchen towels into the logs, placed the glasses on one log and propped with the second log from the other side. You can also use paper towels or even a piece of fruit in between the glasses to make sure they are sturdy. And I just made sure not to put anything on that shelf while dessert was setting in.
