Bean burger on a parchment-lined cutting board.

    Here's Why This Recipe Works

    • Juicy burger. The secret to the best meatless and juicy burger lies in mushrooms. They provide texture and nutrition, making this meaty veggie burger juicy and delectable. Both vegetarians and carnivores will enjoy this easy and healthy burger.
    • Healthy. This easy vegan black bean veggie burger is a wonderful alternative to beef burgers. Beans are a nutritional powerhouse. They're packed with plant-based protein as well as Fiber. Mushrooms are a good source of Vitamin D, potassium, and antioxidants. Several studies have discovered that consuming mushrooms, exercising, and leading a healthy lifestyle might have an important impact on weight loss.
    • Easy. This healthy vegan black bean burger with mushrooms comes together quickly and easily. The prep time is short, and the veggie burgers are perfect for a backyard barbecues, Game days, and summer picnics.

    Ingredients

Ingredients overview for the veggie burger.
Vegan Black Bean Burger ingredients: black beans, mushrooms, red onion, red bell pepper, breadcrumbs, salt, onion powder, garlic powder, and cooking oil.

Veggie burger assembly ingredients: burger buns, tomatoes, red onion, lettuce, mustard, fried onions.

    Ingredient Notes

    • Oil.  It's best to use flavorless cooking oil. I love using avocado oil for cooking because it is a good source of monounsaturated fat which is linked to lower cholesterol and blood pressure. In addition, avocado oil is suitable for high-heat cooking. (Make sure it says so on the label.) You can find avocado oil in any grocery store in the Cooking Oils aisle or on Amazon. Alternatively, you can use sunflower oil. If you want to use olive oil, I recommend using refined Olive oil. It has a lighter color than extra-virgin olive oil and is flavorless.
    • Mushrooms. You can make this savory meatless burger with Portobello or button mushrooms.
    • Beans. I used canned black beans; however you can also make this homemade black bean burger using dried beans. Don't forget to cook them first.

    1. Serve the burgers on buns with your favorite toppings, such as avocado, tomato, lettuce, mayonnaise, or caramelized onions.

    Variations And Substitutions

    1. Mushrooms. You can make this easy vegetable burger with Cremini mushrooms or button mushrooms. If you fancy, Shiitake will give this plant-based burger an excellent flavor.
    1. Veggies: Add other vegetables to the mix, like bell peppers, cauliflower, carrots, or zucchini. Finely chop or shred them before adding them to the burger mixture.
    1. Different herbs and spices: Experiment with different herbs and spices to change the burger's flavor. Add cumin, coriander, smoked paprika, or chili powder for a smoky and spicy flavor. Freshly chopped parsley will also be a great choice.
    1. Binders. You can use gluten-free breadcrumbs for a gluten-free, vegan burger. Alternatively, you can opt for a low-carb binder version by using flax eggs. For this vegan black bean burger recipe, you'll need about three flax eggs which you can make by combing three tablespoons of flax seeds with six tablespoons of water and letting them sit for 5 minutes.
    1. Toppings. Top the easy vegan black bean burger with your favorite toppings like vegan cheese, avocado, pickles, caramelized onions, pesto sauce, or sautéed mushrooms.

    Frequently Asked Questions

    Сan I use other beans?

You can make this veggie burger with red Kidney beans, chickpeas, or a tri-bean blend.

Can I make this with dried black beans?

Absolutely. Ensure to soak them overnight and cook them the next day in a few cups of water. It'll take about 50 minutes. Once the cooked black beans are tender, drain them well and make the recipe according to the instructions.

My burger is falling apart; what can I do?

Make sure to mash the beans well. They're less likely to fall apart when shaping them into patties. If the black bean burger still falls apart, add more breadcrumbs, one tablespoon at a time. You can also add a flax egg of 1 tablespoon of flax seeds soaked for 5 minutes in 2 tablespoons of water.

    Can I bake the burgers?

Yes. Make sure to spray the top of the burger with some cooking spray. Bake for 10 minutes. Flip and bake for another 10 minutes.

    • In a bowl. This pan-fried veggie mushroom burger makes a great addition to power bowls made with quinoa or rice, roasted veggies, green salad, and vegan Tahini dressing.
    • Mexican-Inspired: Top the savory vegan black bean burger patty with guacamole, salsa, and vegan sour cream. Serve with a side of chips and salsa.
    • Breakfast Sandwich: Serve the vegetable black bean burger patty on an English muffin with a slice of vegan cheese and tofu scramble.
    • Slider: Make mini vegan black bean burger patties and serve them on small buns with sweet potato fries.

    Storage Tips

Store the leftovers of juicy vegan black bean burgers with mushrooms in an airtight container in a refrigerator for about three days.

Alternatively, you can freeze them. It is handy if you prep meals and make a big batch of burgers.

First, you need to flesh-freeze the black bean burger patties. Place the uncooked burgers on a parchment-lined baking sheet and put them in a freezer for about an hour until the veggie burgers are firm.

Remove from the freezer and stack the burgers in freezer-friendly storage bags. Vegan black bean burgers can be frozen for up to 3 months.

Cook frozen black bean patties in a 400 F oven for about 10-15 minutes on each side. Don't forget to spray the top of the burger to obtain a delicious and crispy top.
