Spring has finally arrived and I couldn't be more excited. First, I get to wear my new flats and put that heavy winter coat back in a closet. Second - spring means more seasonal fruits and veggies are going to hit the shelves of the grocery stores.
For me, winter was all about comfort dishes, which I absolutely love and still cook. But when the flowers start to bloom and grass is getting greener, my initial response is to eat lighter and healthier dishes.
Lately, I've started collecting coupons. I know, some people are really good at that, but I'm still a newbie:) While grocery shopping at Whole Foods, I picked up their coupon magazine and stumbled upon a recipe, that is perfect for spring. The ingredients of this healthy salmon salad are really simple, but the taste and flavors are outstanding. I'll definitely be making this salad again.
The initial recipe didn't have avocado, but I wanted to add more healthy fats to my lunch. You can skip it if you like, or you can add other vegetables like tomato or cucumber. The main ingredient is definitely a salmon, so whichever veggie you add, the salad will still be awesome.

Ingredients
- 6 oz canned salmon drained
- ½ red bell pepper chopped
- 1 avocado chopped
- 1 stalk celery thinly sliced
- ¼ cup shallots minced
- 2 tablespoons honey mustard
- 2 tablespoons nonfat plain yoghurt
Instructions
- In a large bowl, whisk together honey mustard and yoghurt.
- Add canned salmon, bell pepper, avocado, celery and shallot and stir the ingredients until well combined.
- Serve with crackers.

Hi Rina! Honey Mustard is the variety of Mustard that is sold in grocery stores. If you don't have it, you can take an equal amounts of honey and a regular Dijon mustard. Hope this helps!
