Growing up in Ukraine, we never had shortage of apples, so desserts using various sorts of apples were and still are the most popular ones.

Walnuts and raisins were always available too so whenever we craved something sweet, my parents would make these healthy baked apples. Simple, easy and always goes great at any time of the day.
This recipe is very versatile. You can stuff the apples with any mix of nuts or dried fruits you like.
You can also use candied fruits, bananas or even cottage cheese.
And if you want a little bit of something extra (like me on the day when I baked these apples), drizzle them with simple and quick homemade caramel sauce, that I used for my English Date Pudding.

How Do You Make Baked Apples
1. Soak the raisins. Place the raisins in small bowl and pour over about half a cup of boiling water. Leave them for 5-10 minutes. This step is optional, however it allows the raising to soften for baking. You can also soak the raising in juice. Or, if you're making the dessert for adults - rum will add additional great flavor.
2. Prepare the stuffing. In a small bowl mix together chopped walnuts, raisins, cinnamon and honey and set aside.
3. Core the apples. Thoroughly wash and dry your apples. Using a knife or apple corer, (which I found to work faster and safer), cut out the holes in the apples making sure to leave the bottom ½ inch of the apple intact.Â
You can regulate how much of the apple flesh you want to scoop out. If you want to stuff the apples with more walnut-raisin mixture, make the holes bigger.Â

4. Stuff the apples. Place the apples on a parchment lined baking tray and stuff them with walnut-raisin mixture.
5. Bake. Bake the apples in a preheated to 375 F oven for 40-50 minutes until apples are tender but not mushy.
Aside from Caramel Sauce that you can drizzle on top of apples, you can also serve them with a scoop of ice cream or whipped cream. Super yummy!
