    You know that I love mustard chicken. I’ve tried the mustard-plus-chicken combo in many different recipes. This time, I decided to make grilled chicken but keep the seasoning simple.  

    Dijon mustard, some tarragon, dried thyme, garlic, olive oil, salt, and pepper are all you need to make finger-licking grilled chicken everyone will love. My husband couldn’t stop complimenting me. 

    Everything You Need To Make Grilled Mustard Chicken At Home

    • Chicken- I like to use boneless and skinless chicken thighs because they cook up fast and stay juicy.
    • Tarragon - a very popular herb in France that has a subtle anise flavor. It’s available in most grocery stores.
    • Dried thyme - provides a mild earthy flavor and is another popular herb in France.
    • Garlic—for flavor, the more the merrier.

    How To Make Easy French Grilled Chicken

    1. In a large bowl, combine chicken thighs, mustard, tarragon, dried thyme, garlic, olive oil, salt, and pepper. Marinate for at least 2 hours and up to 24 hours.

    1. Preheat your grill and grill the chicken for 12-14 minutes, flipping every 4 minutes to ensure even browning and until the internal temperature reaches 185 F.

    1. Transfer chicken to a serving platter, sprinkle with fresh parsley, and serve.

    Quick Tip

    Let the chicken rest for 5-10 minutes before slicing to keep the juices inside.

    Tarragon is very potent, so we only use a small amount. If you have dried tarragon, use one-third of the amount called for in the recipe so the flavor complements the mustard and doesn’t overpower it.

    Substitutions And Variations

    I love making this easy chicken recipe with boneless and skinless chicken thighs because they’re juicier. However, you can substitute with bone and skin on chicken thighs, chicken breast, or even wings. 

    Please note that if you make this recipe with any other cut of chicken, the cooking time will change too. I recommend using a meat thermometer. Chicken thighs are ready when the internal temperature reaches 185 F, and chicken breast - 165-170 F. 

    If you don’t have tarragon, you can increase the amount of dried thyme to 1 full teaspoon.

    Serving Suggestion

    This grilled chicken is very versatile and can be enjoyed with many different side dishes.

    I like serving this French grilled chicken with homemade rice, roasted potatoes, or pasta. If you’re grilling out, pair chicken with one of my pasta salads like marinated mushroom pasta salad or halloumi and dill pickle pasta salad. 

    A simple salad of cucumbers and red onions will complete a meal. Also, don’t forget to try my grilled corn with chili lime butter. It can even cook at the same time as the chicken.

    Storage

    Store chicken in an airtight container in the fridge for up to 3 days. 

    Reheat chicken in the air fryer or on the stovetop with a small splash of water or broth.

    • 2 pounds chicken thighs boneless and skinless
