Seared Cod With Tomato-Caper Sauce

  • 1 - 1½ pounds cod, cut into 2 inches fillets
  • 2 garlic cloves, sliced
  • 1 - ½ cup grape tomatoes, halved
  • 3 tablespoons olive oil
  • 1 tablespoon capers, rinsed
  • salt, pepper
  1. Heat olive oil in a large non-stick pan and over medium heat.
  2. Add garlic and cook until it releases its aroma, about 1 minute.
  3. Add grape tomatoes and cook stirring occasionally for 4-5 minutes. Stir in capers.
  4. Season cod fillets with salt and pepper on one side and add to the pan with tomato-caper sauce.
  5. Cook cod for 4 minutes on each side.
  6. Remove from the heat and enjoy with mashed potatoes, rice or pasta!
