Raspberry Financiers Recipe

Serves: 8 - 12 financiers
  • ¾ c powdered sugar
  • ½ c minus 1 tbsp all-purpose flour
  • ½ c plus 3 tbsp almond flour
  • 3 egg whites
  • 11 tbsp unsalted butter
  • ½ teaspoon vanilla
  • 8-10 fresh raspberries
  • 2 tbsp powdered sugar for sprinkling (optional)
  1. Preheat the oven to 400 F with the oven rack in the center of the oven.
  2. Melt the butter in a medium pan over a medium heat. Swirl the butter occasionally to prevent from sticking to the bottom. Once the butter turns amber in color and smells like caramel, take it off the heat. It will take about 15 minutes.
  3. Immediately strain through the fine-mash strainer.
  4. In a medium bowl combine flour, almond flour and sugar. Make a well in the center and stir in lightly beaten egg whites, brown butter and vanilla. Mix well.
  5. Coat muffin tin or a mini muffin tin with a butter and fill each cup with a batter.
  6. Bake for about 4 min. Then remove from the oven and top each Financier with a raspberry or two.
  7. Continue baking for another 9 minutes until financiers turn brown around the edges.
  8. Remove from the oven, let them cool and remove from the muffin tin.
  9. Sprinkle with powdered sugar if desired.
  10. Enjoy!
The way I check if the butter turned brown - I tilt the mixture over to one side of the pan and look if the solid parts of the butter turned brown and stick to the bottom of the pan. If yes, the butter is ready.
