Brownie with mascarpone on a white plate.

I absolutely adore this brownie recipe. It's certainly not your regular brownie, which I'm sure is delicious.

Here, we add a layer of creamy Mascarpone cheese and it takes this classic American dessert to a whole new level.

    Why This Recipe Stands Out

We love a good, fudgy brownie, and when you add a swirl of creamy mascarpone cheese, it takes it to a whole new level. Here's why we're obsessed with this recipe:

    • Deep Chocolatey: We use 7 oz of dark chocolate and 7 oz of unsalted butter for a rich, deep chocolate flavor.
    • The Texture: The combination of sugar, flour, and a bit of baking powder gives these brownies the perfect fudgey texture.
    • Mascarpone Swirl: The mascarpone cheese, egg, and vanilla extract give these brownies with mascarpone cheese a delicious, creamy swirl.
    • Simplicity: This recipe is super easy to make. You don't need any fancy equipment, just a heatproof bowl and a square 9-inch baking pan.
    • Incredible Flavor: The combination of the rich, fudgey brownie with the creamy, slightly tangy mascarpone cheese is absolutely irresistible!

    Key Ingredients

    • Dark Chocolate or Chocolate Chips – We use dark chocolate or chocolate chips, which gives our brownies a rich, deep flavor that chocolate lovers will adore.
    • Unsaltеԁ Buttеr – The unsalted butter is cubеԁ and mеlting іn thе brownіеs mаkеs them soft and mоіst.
    • For Mascarpone Swirl – 8 oz of mascarpone cheese, 1 egg, ½ tеaspoon vanilla еxtract, and ¼ cup sugar are combined to make a dеlіcіоus swіrled tоpріng that takes these brownies to the next lеvеl.

    Substitutions and Variations

These brownies are so versatile and can be easily customized to suit your preferences. Here are some of our favorite variations and substitutions:

    • Different Chocolate: We love using dark chocolate in this recipe, but feel free to use milk chocolate or even white chocolate if you prefer. You can also add in some nuts or chocolate chunks for extra texture.
    • Other Sweeteners: If you're looking to cut down on sugar, you can substitute the sugar with maple syrup or honey. This will also add a nice, subtle flavor to the brownies.

How to Make Brownies with Mascarpone Cheese

Step 1: Combine melted chocolate and butter. Stir in sugar, eggs, flour, and baking powder.

Step 2: Pour ¾ of the batter into a baking pan.

Step 3: In a separate bowl, whisk mascarpone, egg, vanilla, and sugar. Spread over the batter and cover with the remaining batter. Swirl the mixture using a fork.

Step 4: Bake for 30 minutes. Remove from the oven. Let the brownies cool before cutting them.

    Frequently Asked Questions

Can I use a different type of chocolate for this recipe?

Yes, you can use any type of chocolate for this recipe. You can use dark, semi-sweet, or even milk chocolate, depending on your preference. If you're using a chocolate bar, make sure to chop it into small, even pieces so it melts easily.

Why do I need to let the brownies cool before cutting?

Letting the brownies cool allows them to set and firm up. This makes it easier to cut them into neat squares without the risk of them falling apart. It also gives the flavors a chance to meld and develop, resulting in a better-tasting brownie.

How long do brownies with mascarpone cheese keep?

These brownies can be kept at room temperature for up to 2 days. If you want them to last longer, you can store them in the refrigerator for up to a week. Just make sure to keep them in an airtight container.

    Instructions

    • Preheat the oven to 355 F and line a 9-inch square baking pan with parchment paper.
    • Combine the chocolate and butter in a medium heatproof bowl and set the bowl over a pot of a simmering water. The bowl should not be touching the bottom on a pot. Stir from time to time until the mixture is melted. Remove from the heat and let the mixture cool slightly.
    • Whisk in the sugar, followed by the eggs (make sure the mixture has cooled for a few minutes so you don’t scramble them). Then add the flour and baking powder and mix until just combined.
    • Pour ¾ of the brownie batter into prepared pan and spread evenly.
    • In a separete medium bowl, whisk the mascarpone, egg, vanilla extract and sugar until smooth.
    • Dollop the mascarpone mixture over the brownie base then spoon the remaining brownie batter on top. Use a fork or knife to gently swirl the two mixtures together—don’t overmix.
    • Bake for 30 minutes or until the center is set and a toothpick comes out with moist crumbs (not wet batter). Remove from the oven.
    • Let the brownies cool before slicing into squares.
    • Enjoy!

No size is given for the pan. It says lined pan- lined with what? Buttered? Out of 5 oz, of sugar, take out 1/4c. to use in mascarpone swirl? Directions are a bit
      vague.

Hi Tish! Thank you for bringing this to my attention. It's an old recipe and had some mistakes. I fixed the instructions so everything should be fine now.
