What Is Birch Sap
Birch Sap or also called juice is a clear liquid that is collected from Birch trees. It has no smell and looks like water but tastes slightly sweet.
Cultivation of Birch juice has been wildly popular in Eastern European countries. I grew up in Ukraine and vividly remember local people collecting a sap from their backyard birch trees.
Birch Sap is harvested in the early spring and the process is really easy. More on that later.
What is it good for?
Surprisingly for many, Birch juice has an enormous amount of immune-boosting properties. Here are 5 reasons why it’s a good idea to include it your healthy diet:
- It’s very rich in Manganese, Magnesium and anti-oxidants
- Improves metabolism
- Low in carbs
- Cleanses and moisturises the skin as well as beneficial for hair
- Good for treating spring vitamin deficiency
I personally find Birch juice very hydrating and refreshing. I drink it first thing in the morning instead of my regular glass of water and throughout the day.
How to collect Birch Sap?
There’s nothing easier than collecting a Sap. You can do this in 3 easy steps:
- Drill a small hole in the Birch tree, about 1 ½ inch deep. The hole should be the width of a drinking straw. It’s best to use a cordless hand drill.
- Insert a clean drinking straw into the opening with another end of the straw facing down. You may want to shorten the straw. Instead of a straw, you can also use a stainless steel liquor pourer.
- Position and secure a clean bucket or jar directly under the straw and watch it fill with a sap.
When you notice the flow slowing down, you can drill a hole from the other side of the tree or branch.
When your bucket is full, slowly strain the sap into a clean jar using a fine mesh cloth or a strainer.
How long can you store it?
It’s better to consume Birch juice immediately, however if you have too much of it, there 2 ways to store it:
Birch juice can easily be frozen while preserving all the important nutrients. Just pour it into a clean wide mouth glass jar and freeze for up to 2 months.
Birch Sap will keep well for up t0 5 days in a refrigerator.
