Holiday baking season is in full bloom. Have you started creating delicious and scrumptious recipes yet?
For me, baking is inevitable part of all holidays. It's a special time to whip up a batter and create something magical.
Since families live far away, we don't see them often. But for major holidays, they almost always visit us. Kids are so excited because they get to spend time with their grandparents and I'm happy because I get a chance to create unique recipes to impress my whole family.
Without a doubt, holiday-themed cookies are one of the most popular baked treats. But, for me, holidays are also a chance to try new recipes.
Recently I've prepared a fun and tasty treat, that can be enjoyed with your morning coffee or even as a simple dessert. I'm talking about biscotti. These traditional Italian cookies have been known for centuries and became popular in America too.
Here's the thing. If you make biscotti, chances are you'll be making them again. I'm telling you this because firstly - they are really easy to prepare and secondly - these biscotti are addicting. If you have kids over 3 years old, let them help you and involve them in a cooking process. I'm sure they'll be excited and it's a great way to create those wonderful memories of holiday baking.
To give biscotti a modern twist, I substituted 1 cup of flour for a cup of granola, which makes these Italian cookies a good choice for breakfast too.

So, here's what you need. First, head over to the nearest Walmart and buy Quaker® Simply Granola Oats, Apples, Cranberries & Almonds. I found Quaker® Simply Granola to be a great choice for my biscotti. It is tasty and filling with hearty, satisfyingly crunchy granola clusters and delicious inclusions like real fruit and nuts.
Second, check your pantry to see if you have vanilla and almond extract. If not, grab those from the store too.
Start of with preheating your oven to 350 F and lining a large baking sheet with parchment paper. In a medium bowl, whisk together flour, granola, baking powder and salt.
In a large bowl, beat together eggs and sugar. Add vanilla and almond extract, and melted butter. Give everything a nice whisk.
Stir in flour and granola mixture.
Transfer the dough onto a prepared baking sheet and with wet hands pat the dough into a 11 by 4 inches log.
Bake for 25 minutes. Then remove from the oven, let it cool for about 5 minutes and cut the log crosswise into ½-inch-thick slices.
Transfer biscotti back onto the baking dish one side up and bake for 10 minutes. Turn biscotti to the other side and bake for another 10 minutes. Remove from the oven and let cool on a wire rack.
Meanwhile, place white chocolate in a small bowl or cup and put it in the microwave. Heat it in 30 seconds intervals stirring in between sessions until chocolate has melted. Dip each biscotti in melted chocolate and carefully place it on a wire rack allowing chocolate to harden.
