    Ingredients

    • 2 tablespoons ghee or butter
    • 8 chicken thighs bone-in and skin-on
    • 6 tablespoons Dijon mustard
    • 2 lb red potatoes small, cubed
    • 2 tablespoons olive oil
    • 4 cloves garlic pushed through a garlic press
    • ¼ teaspoon black pepper
    • 1 teaspoon salt
    • 1 teaspoon dried thyme
    • 2 tablespoons Parmesan cheese shredded, optional
    • 2 tablespoons Italian parsley finely chopped

    Instructions

    • In a medium bowl mix chicken thighs, ½ salt, and mustard.
    • Heat ghee or butter in a large skillet over medium heat. Add chicken skin side down and fry for 5 to 7 minutes until the skin is brown. Flip it and cook for 3 more minutes.
    • Arrange potatoes on the bottom of a slow cooker. Add olive oil, garlic, black pepper, the remaining ½ teaspoon salt, dried thyme and mix to combine.
    • Place chicken skin side-up on top of potatoes. Cover with a lid and cook for 4 hours on high or 7 hours on low.
    • Once ready, sprinkle with optional Parmesan cheese and parsley.

    Notes

    • You can use boneless, skinless chicken thighs if you prefer, but the bone-in, skin-on thighs add extra flavor and juiciness.
    • Don't skip browning the chicken in a skillet before adding it to the slow cooker. This step enhances the flavor and texture of the chicken.
    • Make sure to cut your potatoes into small, even-sized pieces. This helps them cook evenly and ensures they're tender but not mushy.
    • Feel free to customize the seasonings to your preference. We love the combination of Dijon mustard, garlic, and thyme, but you can add other herbs and spices to make the dish your own.
    • This dish is best served immediately, but you can store any leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave or on the stovetop.

      Thank you for this super simple and yummy meal. Made this for my family of 6. Followed the exact recipe and it came out perfect. Mine cooked for about 6.5 hrs on low. I'm so happy I was able to prep it in the morning before work and come home to a hot homemade meal. I will definitely make this again.
