Ingredients
- 1 round Boursin cheese 5.3 oz, any flavor
- 1 bunch 1 lb asparagus
- 2 cloves garlic pushed through a garlic press
- 2 tablespoons olive oil
- ½ teaspoon red pepper flakes
- salt to taste
- pepper to taste
- 8 oz spaghetti
- ½ c parmesan cheese
- 4 teaspoon parsley chopped
Instructions
- Preheat the oven to 375 F.
- Cut off the bottom woody parts from the asparagus, about 1 inch. Cut asparagus into smaller 1 inch pieces.
- Place a round of Boursin cheese in the center of a rimmed baking dish. Scatter asparagus around the cheese. Add garlic, olive oil, salt and pepper. Mix to combine. Bake for 25-30 minutes or until the asparagus is tender to your taste.
- Meanwhile, bring a pot of salted water to a boil. Add spaghetti and cook until al dente, about 8-10 minutes. Drain pasta reserving 1 cup of pasta cooking water.
- Remove cheese and asparagus from the oven. Add cooked spaghetti, along with a few tablespoons of the reserved pasta cooking water and mix to combine. If needes, add more pasta cooking water to loosen up the sauce.
- Divide spaghetti between 4 plates. Top with parsley and serve immediately.
