Why This Recipe Stands Out
This Beef Liver Pâté with Roasted Garlic is rich, silky, and surprisingly mild, making it a nutrient-dense appetizer that feels elegant and deeply satisfying. Here’s why I love it:
- Creamy, Smooth Texture: Steaming the liver and blending it with roasted garlic and butter creates an ultra-smooth pâté. It spreads beautifully on toast or crackers without feeling grainy and reminds me of my Tuna Rillettes.
- Mild, Balanced Flavor: Soaking the liver in milk helps reduce bitterness, while roasted garlic adds natural sweetness and depth. The result is savory and rich without being overpowering.
- High-Protein and Nutrient-Dense: Beef liver is packed with iron, vitamin A, and B vitamins, making this pâté both indulgent and nourishing. It’s a traditional recipe with real nutritional value.
- Easy Instant Pot Method: Using the Instant Pot makes cooking liver simple and hands-off. It keeps the texture tender and prevents overcooking.
- Perfect for Appetizers or Snacking: Serve this homemade liver pâté with toasted baguette slices, crackers, or fresh vegetables. It’s ideal for charcuterie boards or elegant starters.

Key Ingredients
- Beef Liver – The main ingredient that gives this pâté its rich, earthy flavor. I like to use fresh beef liver for the best taste and texture. Chicken liver can be used instead for a milder flavor.
- Whole Milk – Used to soak the liver before cooking, which helps mellow its strong taste. It’s also blended in at the end to make the pâté creamy and smooth. You can substitute with half-and-half or a dairy-free milk if needed.
- Garlic – A whole head of garlic is roasted until soft and golden, adding a sweet, mellow depth that balances the richness of the liver.
- Butter – Melted butter adds richness and helps create a velvety texture in the finished pâté.
- Cayenne Pepper – Optional, but I like adding a small pinch for gentle warmth and a little kick.
Substitutions and Variations
Here are some of my favorite substitutions and variations:
- Liver Options: I usually make this with beef liver, but chicken or pork liver work just as well. Chicken liver gives a milder flavor and a slightly creamier texture.
- Flavor Add-Ins: Try adding a splash of brandy or cognac before blending for a classic French touch. You can also mix in a few caramelized onions for extra sweetness.
- Herb Ideas: I like to blend in a bit of fresh thyme or parsley for a lighter, fresher taste. Rosemary or sage also pair nicely if you want something more aromatic.
How to Make Instant Pot Beef Liver Paté
Step 1: Wash the liver and place it in a medium bowl. Pour one cup of milk over it and let it soak for 30 minutes to 1 hour.
Step 2: Preheat the oven to 300°F. Cut ¼ inch off the top of the garlic head and drizzle it with avocado oil.
Step 3: Place the garlic in a small baking pan and roast for 30 minutes until soft and golden brown. Remove from the oven and let it cool.

Step 4: Peel each roasted garlic clove and set them aside.
Step 5: Place a trivet in the bottom of the Instant Pot and pour in one cup of water.
Step 6: Drain the liver and place it on the trivet. It is fine if some pieces fall through.
Step 7: Secure the lid and turn the valve to “Sealing.” Select “Steam,” set to low pressure, and cook for 10 minutes.
Step 8: Let the Instant Pot naturally release for 10 minutes, then manually release any remaining steam.
Step 9: Open the lid and allow the liver to cool to room temperature.
Step 10: Optional – remove the outer membrane from the liver with a knife for a smoother texture.
Step 11: Add the liver, roasted garlic, ½ cup of milk, melted butter, cayenne pepper, and salt to a food processor. Blend until smooth.

Step 12: If the pâté is too thick, add more milk, one tablespoon at a time, until you reach the desired consistency.

Step 13: Transfer the pâté to a serving bowl and serve with toasted baguette slices or crackers.

Frequently Asked Questions
Yes. Chicken liver works beautifully in this recipe and gives a milder, slightly sweeter flavor. You can follow the same steps and cooking time in the Instant Pot.
Soaking the liver helps remove any bitterness and gives the pâté a smoother, more delicate taste. If you’re short on time, even a 20-minute soak will make a difference.
You can, but roasted garlic adds a soft, sweet flavor that balances the richness of the liver. If you use raw garlic, start with a smaller amount so it doesn’t overpower the dish.
If your pâté feels a bit dense, add more milk a tablespoon at a time while blending. Removing the thin outer membrane from the cooked liver also helps create a creamier texture.
Store the pâté in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze it in small portions for up to 2 months and thaw in the fridge before serving.

Beef Liver Pâté Recipe
Ingredients
- 1 lb beef liver
- 1 ½ c whole milk
- 1 head garlic
- 1 teaspoon avocado oil
- 1 tablespoon butter melted
- ¼ teaspoon cayenne pepper optional
- ½ teaspoon salt
Instructions
- Rinse the beef liver under cold water and place it in a medium bowl, then pour 1 cup of the milk over it and let it soak for 30 minutes to 1 hour.
- While the liver soaks, preheat the oven to 300°F, slice about ¼ inch off the top of the garlic head, drizzle with avocado oil, and place it in a small baking dish.
- Roast for about 30 minutes, until soft and golden brown, then remove from the oven and let cool before peeling the cloves from their skins.
- Place a trivet in the bottom of the Instant Pot and add 1 cup of water. Drain the liver and arrange it on the trivet, allowing pieces to overlap if needed.
- Secure the lid, set the valve to “Sealing,” select the “Steam” function on low pressure, and cook for 10 minutes. Allow a natural release for 10 minutes, then carefully release any remaining pressure and open the lid.
- Let the liver cool to room temperature, then, if desired, gently remove and discard the thin outer membrane for a smoother pâté.
- Transfer the liver to a food processor along with the roasted garlic, remaining ½ cup milk, melted butter, cayenne pepper if using, and salt, then process until smooth, adding additional milk 1 tablespoon at a time if needed to loosen the mixture.
- Spoon the pâté into a serving bowl and serve with toasted baguette slices or crackers.
Notes
- Soak the liver in milk to mellow its flavor and remove any bitterness. Even 30 minutes makes a noticeable difference.
- Roast the garlic until golden and soft for a sweet, mild taste that balances the richness of the liver.
- Use low pressure on the Instant Pot to keep the liver tender and prevent it from overcooking.
- Let the liver cool before blending to avoid a grainy texture. Warm liver can make the pâté less smooth.
- Remove the thin outer membrane after cooking for a silkier finish. It takes a minute but improves the texture.
- Add milk gradually while blending to reach your preferred consistency. A tablespoon or two can make it perfectly creamy.
- Taste and adjust the seasoning before serving. A pinch more salt or cayenne can brighten the flavor.
- Chill the pâté for at least an hour before serving. It firms up and spreads more easily.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- Serve with toasted baguette slices, crackers, or fresh vegetables for a balanced appetizer.
