Hi there! Are you in a mood for Thanksgiving yet? I hope so. And today, I want to share with you an incredibly delicious and healthy baked carrots recipe that will quickly become a staple for every occasion.
This past week I've been in the anticipation of Thanksgiving. I feel that I start to like this holiday more and more. Obviously this is a true American holiday and we didn't celebrate it in Ukraine. So when I moved to America, the first couple times that I celebrated it, I didn't share that festive mood like other people born in the US.
But, today Thanskgiving become one of those special days when our house is filled with people, good food and lots of laughter. And although it is a family holiday, but since our parents live far away, we rarely have a chance to spend this day with them.
Nevertheless, this year will be the first year that we're going to have a lot of guests. And I couldn't be more excited. I love having people over. I started to plan my Thanksgiving menu long ago. Although, every time I watch Food Network and their awesome recipes, I tend to do a lot of amendments to my own menu.I think, the food that I'm most excited about are side dishes. We usually have a variety of them and this year, we'll have even more side dishes.
I've been making baked carrots for a while as our regular dinner side dish. And although in Ukraine we don't cook carrots other than as part of a soup or salad, I quickly become a fan of this easy baked carrot dish.
And what's not to love.
Baked carrots are easy to pull off, they are delicious and healthy.
I have to admit, for many years, my regular baked carrots recipe consisted of carrots, garlic, olive oil, salt and pepper. You can make it like that and it's going to be delicious.
But recently, I stumbled upon a new simple twist on this recipe by a genius Jamie Oliver. If you know, who I'm talking about, it's not a secret that all of his recipes are fantastic.
So, in his recipe, he suggests adding a little bit of fresh thyme and balsamic vinegar. Hesitations aside, these ingredients are almost always a staple in my house. So, I gave it a try.
Needless to say, the dish come out just lovely. Baked through carrots become soft and juicy, garlic gave a nice punch of flavor and thyme released its oils and made this simple dish even more delightful.
For this recipe, I chose multicolored carrots, but any regular carrot would work. And you would definitely want to double the ingredients if cooking for many people.
Ingredients
- 10 carrots washed and peeled
- 5 cloves garlic crushed
- 6 fresh thyme springs
- olive oil
- balsamic vinegar
- salt pepper
Instructions
- Preheat the oven to 400 F.
- In a medium baking dish, combine carrots, crushed garlic, thyme, salt, pepper, olive oil and a splash of vinegar. Give it a nice toss. Cover the dish with aluminum foil and bake for 30 min. Remove the foil and continue baking for another 10 min until carrots are nice and caramelized.
- Serve warm!
