    Ingredients

    • 5 chicken thighs
    • 1 pound fingerling potatoes halved
    • 4 medium shallots quartered
    • 8 small carrots halved
    • 1 bunch broccoli cut into florets
    • ½ teaspoon paprika
    • ½ teaspoon turmeric
    • ½ tablespoon salt + 1 teaspoon salt
    • 1 teaspoon pepper
    • 3 tablespoons olive oil

    For the Apricot Glaze

    • ¼ cup apricot preserve
    • 1 tablespoon balsamic vinegar
    • 1 tablespoon whole grain mustard

    Instructions

    • Preheat the oven to 425.
    • Sprinkle chicken thighs with paprika, turmeric, 1 teaspoon salt, ½ teaspoon pepper.
    • In a small sauce pan combine glaze ingredients and simmer until thickened. Brush each thigh with apricot glaze.
    • Place chicken on a rimmed baking sheet and bake for 20 minutes.
    • Meanwhile, in a large mixing bowl combine fingerling potatoes, carrots, onions, broccoli, olive oil, ½ tablespoon salt and ½ teaspoon pepper. Give everything a stir.
    • Remove pan from the oven and once again brush apricot glaze over the chicken. Discard any juices from the pan.
    • Spread vegetables on the pan around chicken and continue baking for 20 minutes until vegetables are soft.
    • Enjoy!
