Key Ingredients
- Chicken Thighs – The star of our dish, chicken thighs are flavorful and juicy. We use bone-in, skin-on thighs for the best flavor and texture.
- Fingerling Potatoes – These small potatoes are waxy and hold their shape well when roasted, making them the perfect addition to our sheet pan dinner.
- Apricot Preserve – Our glaze is made from apricot preserve, which adds a sweet and tangy flavor to the dish. Make sure to use a good quality preserve for the best results.
Substitutions and Variations
Looking to change things up a bit? Here are some of our favorite substitutions and variations:
- Protein: While we love the flavor of chicken thighs, feel free to substitute them with chicken breasts or even drumsticks. You can also use this apricot glaze with a pork roast or pork chops.
- Potatoes: If fingerling potatoes are hard to find, regular potatoes or sweet potatoes cut into cubes will work just as well. You can also omit them entirely and serve the apricot glazed chicken with a side of rice, quinoa, or cauliflower rice.
- Veggies: The veggies in this recipe are just a suggestion. Feel free to use your favorite veggies or whatever is in season where you are. Some other great options are asparagus, green beans, bell peppers, or Brussels sprouts.
