One-Pan dinners have never been easier. Crispy baked Apricot Glazed Chicken thighs, fingerling potatoes, carrots and broccoli make a delicious and fast weeknight meal for the whole family.
Apricot Glazed Chicken With Fingerling Potatoes And Broccoli
Who loves one-pan meals? I do. I started loving them even more after I became a mom. Because who has a time to wash all those dishes, right?
I think you're in the same boat as I am. If your days consist of endless cleaning, laundry, looking after the kids, I've got a delicious One-Pan recipe that will make your life easier. You can throw it together in minutes and let oven do the job.
In this recipe I've used figerling potatoes. Can I just say how cute they are? It was my first time buying it, but I already love it. And I think, for kids it will be even more fun eating fingerling potatoes since they are small and has all these funky colours.
Apricot Glaze adds a little sweetness to the chicken and if you're a fan of sweet and sour combination, you'll absolutely love this recipe.

Ingredients
For the Apricot Glaze
- ¼ cup apricot preserve
- 1 tablespoon balsamic vinegar
- 1 tablespoon whole grain mustard
Instructions
- Preheat the oven to 425.
- Sprinkle chicken thighs with paprika, turmeric, 1 teaspoon salt, ½ teaspoon pepper.
- In a small sauce pan combine glaze ingredients and simmer until thickened. Brush each thigh with apricot glaze.
- Place chicken on a rimmed baking sheet and bake for 20 minutes.
- Meanwhile, in a large mixing bowl combine fingerling potatoes, carrots, onions, broccoli, olive oil, ½ tablespoon salt and ½ teaspoon pepper. Give everything a stir.
- Remove pan from the oven and once again brush apricot glaze over the chicken. Discard any juices from the pan.
- Spread vegetables on the pan around chicken and continue baking for 20 minutes until vegetables are soft.
- Enjoy!
